Winterize Your World Wednesday - Soup's On! Published on January 20, 2016 Husband and wife bloggers Jamin and Ashley Mills (The Handmade Home) love soup so much that they sometimes turn down the air conditioner in the home when temperatures outside are still warm just so they can eat one of their top choice meals.Since we’re presently in the deep cold of winter, most people won’t have to go to that extreme – but who doesn’t want a warm bowl of soup? Whether it’s for the children’s lunch, a simple Thursday night dinner, or something to offer friends who come over to watch the big game, soup is always a simple, tasty solution.Jamin and Ashley are sharing seven of their top choice soup recipes – enough to winterize a whole week! Here is the first one we are excited to try:Tomato Chicken Tortellini Soup: 28 oz can of diced tomatoes 6 oz tomato paste 1 Tbsp unsalted butter 1 1/2 cup cooked chicken 1/4 cup minced white onion 2 1/2 cup chicken broth 2 1/2 cups cheese tortellini 1 Tbsp salt 1/2 Tbsp black pepper 1/2 tsp garlic powder 3/4 cup heavy cream (you can try substituting Greek yogurt for a less fattening option, but we went for the cream) shredded mozzarella cheeseJamin and Ashley prefer using a rotisserie chicken, but if necessary, start by baking and shredding the chicken. Then cook the tortellini according to your package’s instructions. (Hint: they use the same pot they are cooking the soup in to cook the tortellini - less dishwashing.)Once the tortellini is cooked completely, drain and put it to the side. In the pot, pour all other ingredients, excluding the tortellini. Bring them all to a boil and cook on a medium heat for about 15 minutes.
